Ive worked as a courier in France for 3 seasons it is a fantastic summer job for all kinds of people.
You need to start applying Nov/Dec time, there are plenty of companies to apply to, a few of the better ones:

Holidaybreak
Canvas
Thomson Alfresco

I've found through experience and many conversations with other couriers, it is best to apply to the bigger companies as above. Beware of the smaller family run companies that give you a job interview over the telephone and promise bonus wages at the end of the season, if the company hasn't made much profit during the season it is highly unlikely that you will receive the bonus and sometimes your last wage packet!!!

Do a quick search on line of the company you have applied to check how they treat thier staff and what holiday makers think of the company.
